Recipe No. 4 For 2th Chakra: Roasted Beets with Pistachios/ Pomegranate

This recipe is full of vitamins E, K, B6, B2, B1 and C. Also minerals like iron, potassium, phosphorous, magnesium and calcium


All you need is:

- beets: one per person
- lemon juice for 6: 1
- Fresh parsley to be finely chopped: 1 table spoon
- Olive oil: 1/4 cup
- Chopped roasted or fresh Pistachios or fresh pomegranate: 1/4 cup

How to prepare?

- Preheat the oven up to 375 degrees F
- Wrap the beets in separated foil and place them in the oven for 35 mints
- Once they are cold enough, remove the skin and Slice to quarter
- Add the lemon juice into a bowl with parsley and seasoning like salt and pepper and add the olive oil
- Lay the beets in the seasoned sauce and drizzle with vinaigrette and add Pistachios/ pomegranate on the top

Note: you can use any other favorite toppings.
